Do you like roof top gardens, fancy and delicious wine, and exceptional cocktails? I thought you did. I accidentally (on purpose) have spent a few nights at Proof just off of Waymouth Street over the last few days and need to gush about the experience to you (or anyone that will listen). The perfect place to start a night out, Proof will make you feel like you belong and get you ready to greet the night with gusto.
I’ve got to say, the best thing about Proof isn’t the extensive wine list or quality cocktails, but the atmosphere. Tucked down a side street, it sidles out and invites you in with a wink and a raised glass. They describe themselves as a sophisticated wine bar, but you can sense a tongue in cheek, let’s-not-take-ourselves-too-seriously attitude. For example, their Facebook page assures you that Christopher Walken is their General Manager. I have my doubts.
They also serve ‘cocktails, fine wines, small plates, and toasties’, according to the website. What I’ve tried has been delicious, and the side serving of fun just makes it better. Because it’s so gorgeous and admittedly pricey, it runs the risk of coming across as a bit overwhelming or intimidating. Luckily, offering toasties and having genuinely friendly relaxed service is enough to put you right at ease.
You can be sure you’ll be looked after. After spending some time out on the rooftop, I decided I wanted some cheese to go with my wine and cards (yeah, I got a fair amount of joy out of that sentence). Wandered downstairs, asked the barman if that was a thing, was told it was and he’d bring it over. So easy. No bothering with menus, although I’m certain they would be happy to bring you one. It’s just nice to go somewhere they’re confident to recommend your next cause for happiness.
If you, like me, are happy to pay a little bit extra to feel like you’re mingling with the A-Listers, then Proof is your new best friend. The atmosphere, service and delicious offerings serve to make you feel at home, but a much more sophisticated home than you might be used to.
